I bought this knife for slicing briskets and the sort. I cut this brisket in half to use the flat for making pastrami. The Sujihiki sliced through it with no problem. The length and sharpness are exactly what I was looking for. I’ll soon have a custom handle on it to personalize it for me. I really enjoy Itsuo Doi knives. His quality is simply perfect.
