I would highly recommend the Lotus coffee water bicarbonate solution. I read about it in an article on Standart magazine and it made me realize how important the quality of water is in the coffee that we drink. Adding a few drops of this solution to my espresso machine made a significant difference in the acidity and balance of my espresso.
