As a whole, I am very satisfied with this course (Holistic Nutrition). The books are fascinating and I am always excited to read my text for the week. I have altered my diet a bit to include more fruits and vegetables and less animal products. I haven't cut them out entirely, but I do think that scaling back has helped me to feel better. A plant-based diet certainly is intriguing! I'm on week 9 now and already thinking about which certification I'll pursue next.
