Finally, I have a quick meal option that is actually really good for my health, plays nice with my diabetes, and makes me feel like I'm eating real food instead of off moping in the usual alternate universe of GF foods, which I refer to as the 'this is what my life has come to' category. Thank you, Chickapea, for bringing mealtime back into the sunshine.

So happy to have found a pasta I can actually eat, tastes good, that's high in protein and doesn't spike my blood sugar!
