As part of the fan, it's the best cut on the bird, hands down. I like size and shape, looks just like the pictures... super versatile.

This is easily the finest lamb I've ever tasted. Unlike most lamb imported from New Zealand and Australia, domestic lamb is very mild flavored, tender, and not at all gamey. I slow roasted the lamb shoulder with plenty of garlic and rosemary and onions from my garden. It was succulent, falling off the bone, and was a hit with everyone who tried it. Will definitely be making the switch to Idaho grass-fed lamb from now on!
