Flavored Chocolate Truffles
For more than 20 years, I have made ganache-based chocolate truffles as holiday gifts. The limitation I have always faced is that the addition of flavorings often added a chemical taste to the truffles, or the flavorings weren't concentrated enough to be noticed through the chocolate. If I added enough alcohol or water-based flavorings to shine through the chocolate, the additional liquid would render the ganache too soft to handle and dip.
Until this year, when I discovered Nature's Flavors oil-based flavorings designed for chocolate. They are so highly concentrated that very little is needed, so there was no change to the firmness of the chilled ganache, and the flavors shone through the chocolate beautifully, with no chemical overtones.
I have now added Raspberry, Mint and Orange flavors to my truffle boxes, and my friends and family are delighted with the variety. Thank you, Nature's Flavors!
