The Vollrath Mirage Pro Is a superb cooking tool. It has one flaw which I discovered early on. Do not use cooking by temperature as temp sensing is not very good. Use power setting mode for spectacular gas like heat control. This unit is very quiet and built like a tank. Great addition to food preparation and service. I no longer use my gas range as the Mirage has all the power and control needed. Power setting of 21% gives steady 450 degree on my comal for tortilla making. Made a wonderful black bean soup yesterday that is to die for.
